Anthocyanidins
Anthocyanidins are anthocyanins that do not contain sugars, and Anthocyanidins pigments are widely found in the tissues of blueberries, grapes, blood oranges, purple sweet potatoes, red cabbage, eggplant skins, cherries, red oranges, cranberries, strawberries, mulberries, hawthorn bark, perilla, black (red) rice, morning glory and other plants.
Anthocyanidins are water-soluble pigments that can change color with the acidity or base of the cell fluid. If the cell fluid is acidic, it is reddish, and if the cell fluid is alkaline, it is blue. Anthocyanidins are one of the main pigments that make up the color of petals and fruits.
