Mechanism
The main components of Gardenia Yellow Pigment are crocin and crocetin of the carotenoids, and also contain gardeniposide of the iridoid glycosides, flavonoids, and chlorogenic acid. Crocin and crocetin are rare water-soluble carotenoids with multiple conjugated double bonds in the molecule. On the one hand, they give the gardenia pigment a yellow color, and on the other hand, they are also one of the reasons why the gardenia pigment is unstable. There are seven derivatives of crocetin in gardenia yellow pigment. The differences in chroma and brightness of these seven derivatives are very small. However, as the number of glucose genes connected to crocetin increases, the color (hue) of the derivative decreases, and the color changes from red to yellow.
Application
Food Industry
The Gardenia Yellow Pigment can inhibit 80% of the oxidation of linoleic acid, so it can be used as an antioxidant in food processing; it has good heat resistance. Therefore, Gardenia Yellow Pigment can be used in the food industry as an antioxidant and colorant.

Silk Fabric
Research shows the dyeing properties of natural Gardenia Yellow on silk fabrics. The dyeing conditions were changed, and the direct dyeing method and mordant dyeing method were used to dye the silk. The optimal dyeing process was optimized through orthogonal experimental analysis. The results show that gardenia yellow can directly dye silk fabrics, the dye dosage has the greatest impact on the dyeing results, and the dye has better lifting performance. Post-mordant dyeing is suitable for gardenia yellow mordant dyeing. Compared with direct dyeing, the color of post-mordant dyed fabrics does not change significantly. Except for the light fastness not exceeding level 3, other fastnesses are basically above level 4, and more restoration.
